Wild game recipe: Wild duck in Crockpot

1 duck 1 tsp. instant minced onion 1/4 tsp. tarragon 2 T. butter 1/2 c. orange juice

1 duck

1 tsp. instant minced onion

1/4 tsp. tarragon

2 T. butter

1/2 c. orange juice

1/4 tsp. dry mustard

1/4 tsp. salt

1/4 c. currant jelly

1 T. grated orange peel

2 T. port wine

Skin and cut the duck in half. Place the halves in a crockpot. In a small saucepan, sauté the onion and tarragon in butter. Add the orange juice, dry mustard, salt, jelly and orange peel. Cook, stirring until the jelly is melted. Take off the stove and stir in the port wine. Pour the mixture over the duck, cover and cook on low heat for 8 to 9 hours. Serve with wild rice.
